Funny hearing Billy Gibbons talking about the downbeat on the intro to Start Me Up. It always seemed pretty obvious to me that Charlie just got the first snare crack wrong and recovered quickly. He does that sort of thing more often that not and in the true jazz tradition it doesn't really matter where you go as long as you end up in the right place, a Rolling Stone tradition of sorts actually.
In live performances Charlie usually just waits till the groove is well established on SMU before he comes in the the standard beat. Don't think I've ever heard him repeat that "mistake" snare hit except on the record, which is one of the things that makes me think it was just a mistake.
Bo Diddley's Crackin' Up is a completely different story because the drummer never plays a straight beat the whole damn tune, one of the very cool things about that song. Even the drummer can't find the downbeat. LOL
